Gluten nut biscuits


  • 125g unsalted butter, softened
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons natural yoghurt
  • 1/2 firmly packed cup (100g) brown sugar
  • 150g rice flour
  • 150g unsalted mixed nuts with sultanas, roughly chopped


Step 1

Heat the oven to 180°C. And line 2 baking trays with baking paper.

Step 2

Take cream butter and sugar and to be together by using electric beaters in a bowl until pale and thick.

Then add the egg with vanilla, and beat to mix.

Wrap in yoghurt, flour with nut mix.

Roll slightly rounded tablespoons of the mixture, flatten and place on trays.

Bake in the oven about 12 minutes .

Cool on trays about 5 minutes, after change to a rack to cool.

Keep in an hermetic container for up about 3 days.
