Easy eggplant balls


  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped fresh parsley
  • 2 eggs, beaten
  • 3/4 cup dried bread crumbs
  • 4 cups cubed eggplant, with peel
  • 1 tablespoon water


Heat oven to 350 degrees F . Grease a baking sheet.

Preheat a medium frying pan in medium heat. Decant in olive oil and saute garlic just until lightly browned. Combine in eggplant and water. Minimize heat to low and cover frying pan. Allow eggplant to steam until soft,for 20 minutes. Put eggplant in a large bowl then  allow to cool slightly.

Combine cheese, parsley, eggs, and bread crumbs into eggplant. Move with a wooden spoon until ingredients are fully mixed and mixture can be rolled into balls. Then add more bread crumbs as needed to make mixture workable. Refrigerate mixture about 15 minutes, after roll into balls .

Put eggplant balls on prepared baking sheet. Bake in heated oven about 30 minutes. Serve after cooked.
