  • 2 tbsp olive oil
  • 2 large onions, chopped
  • 3 garlic cloves, crushed
  • 2 fresh or dried bay leaves
  • salt and freshly ground black pepper
  • 800g-1kg/1¾-2¼lb dried tagliatelle
  • 2 carrots, chopped
  • Stick of celery
  • 1kg/2¼lb lean minced beef
  • 2x400g cans chopped tomatoes
  • freshly grated parmesan cheese, to serve


1.Preheat the oil in a large, heavy-based saucepan then fry the meat until browned in a medium heat. Then add the onions and garlic, frying after be softened. Boost the heat with adding the  beef. Fry it after to be browned.Minimize the temperature then move in the tomatoes and celery.

2.After Cover with a lid and let in a gentle heat about 1-1½ hours after it's rich and thickened,move time to time.

3.Prepare and cook the tagliatelle in plenty of boiling salted water. Drain then split between plates. And Sprinkle a little parmesan in the pasta before adding a good ladleful of the sauce. Finish with a further scattering of cheese and improve of black pepper.
